My Cooking Style

I take simple ingredients and dress them in something extravagant.

My focus is creating flavorful, beautiful-looking meals with an emphasis on innovation and purity. I am always trying to incorporate a wide range of ingredients into my style and seek to craft meals that are bursting with flavor and nutritional content. I incorporate my love for cooking with the technical knowledge that I have acquired from my studies at the French Culinary Institute.

My arsenal now includes techniques inspired by Molecular Gastronomy, but I believe that food doesn't have to be fussy or difficult in order to be interesting and delicious. I have been experimenting recently with deconstructing classic dishes, highlighting each component with top-quality ingredients and creating a new eating experience.

My Culinary Experience

I had not cooked anything until about 4 years ago. I was always interested in food, but my experience never went beyond eating in restaurants and admiring my wife's mother, who is an excellent cook. After working in Finance, I took advantage of an opportunity to study at the French Culinary Institute and graduated from FCI last year. During my studies, I was interning at the Dutch in NYC. After completion of my courses, I started working in Park Avenue Winter.

During my time at Park Avenue I started my catering business called "Cooking With You and For You" through which I work with customers to bring the restaurant to your door! I think it is important to volunteer as well and have helped at events such as the James Beard Foundation “Taste of the NFL” with Bobby Flay.

We had the lovely suprise of a sit-down dinner at the lawin residence this Christmas which was professionally catered by Chef Michael P (I was expecting buffet!). What a wonderful dinner. Michael and his team operated in an open plan kitchen in a quiet, methodical but totally relaxed manner - in other words you could go in and chat to them whilst they worked and it was totally cool. Food was innovative and i appreciated Michael introducing the various dishes and their components. Michael was amazing! We asked for the Haus of Gastronomy Goes to Italy menu without the fish course. Every bite was delicous. The sous vide Filet Mignon, gnocchi and olive oil powder were exceptional. He prepared artic char for one of our guests who doesn't eat red meat and she said it was the best fish she had tasted in her life. Our guests are still raving about the meal a week later. Michael was a pleasure to work with from start to finish. The meal was unforgettable. I strongly recommend him. No restaurant experience can duplicate having your own chef for the evening. Michael is a very talented chef, and an incredibly hard worker. We would have done it again in a heartbeat and hope to have Michael back again before he becomes famous!

A delicious creative gastronomic experience! Unusual and tasty combinations of herbs and spices and very wittily presented. Especially loved the taste and presentation of the appetizers in the hanging glass globes, the funnels atop bottles, etc. The ingredients were fresh and fragrant. I had the fish which was yummy. The salad had surprising elements of candied nuts and such. YUM!

Chef Michael is a flavor bomber. but seriously, for food that is so aesthetically appealing and meticulously plated--it's impossible to fathom how a drop of his basil oil is more satisfying than a bowl of homemade pesto. a squiggle of his truffle gel, atop fresh corn panna cotta, is earthy as it is farm-fresh chic. and his fish.
is another story. Fish is Chef Michael's specialty in my books. Sous-Vide, Smoked Arctic Char, crusted with pumpernickel, is melt-in-your-mouth delicious. Top 5 fish experience I've had in this city, hands down. , Beautiful, seasonal, flavorful, satisfying, wholesome, celebratory food--and exactly why Chef Michael was the perfect pick for my foodie Mother's Celebratory Birthday Dinner.
