Seasonal Modern American. You know, green market produce and local meats, but utilizing ingredients from all cuisines. (i.e. Not afraid to roast lamb rack crusted in mustard and nori). I love simple dishes brought to their highest potential. For example, eating a simple lemon meringue pie can be a truly amazing experience, when done right. However, I also enjoy refined techniques, like roasting a whole beef rib, or making ravioli, that are usually reserved for special occasions.
