Chipotle Mexican Grill was started by Steve Ells in 1993, with the headquarters in Denver, Colorado. The name “Chipotle” derives from the Nahuatl or Mexican name that pertains to a smoked, dried jalapeño chili pepper.

Before this, the founder, Steve Ells attended the Culinary Institute of America in Hyde Park, New York prior to becoming a line cook for Jeremiah Tower at Stars in San Francisco, California. That founding year, he opened the first restaurant in Colorado, near the University of Denver campus by borrowing $85,000 from this father, pretty similar to how other restaurant founders would start their business.

They started with the calculation that they will need to sell 107 burritos daily in order to gain a profit. However, in just after a month, the restaurant had sold over 1,000 burritos per day.

It was during this time that the stock price of the restaurant went up to more than 12 percent after the change in leadership.
