Chipotle Mexican Grill History

Chipotle Mexican Grill was started by Steve Ells in 1993, with the headquarters in Denver, Colorado. The name “Chipotle” derives from the Nahuatl or Mexican name that pertains to a smoked, dried jalapeño chili pepper.

Before this, the founder, Steve Ells attended the Culinary Institute of America in Hyde Park, New York prior to becoming a line cook for Jeremiah Tower at Stars in San Francisco, California. That founding year, he opened the first restaurant in Colorado, near the University of Denver campus by borrowing $85,000 from this father, pretty similar to how other restaurant founders would start their business.

They started with the calculation that they will need to sell 107 burritos daily in order to gain a profit. However, in just after a month, the restaurant had sold over 1,000 burritos per day.

Today, specifically in 2017, Chipotle Mexican Grill now has over 2,400 restaurants. Unlike other food establishments, they do not offer their business for franchise, but instead maintain their commitment to sustainable ingredients.

Did you know that McDonald’s invested in the company? That’s right. In 1998, the world’s famous fast food chain made an initial minority investment in the company and in 2001, McDonald’s is the largest investor of Chipotle Mexican Grill. This investment allowed the company to expand to 16 restaurants in 1998 to over 500 stores in 2005. However, in October 2006, McDonald’s divested from Chipotle Mexican Grill, along with their other investments. But they knew how to land on this fall. Following the divestment of McDonald’s, the Mexican restaurant chain bought back the very few franchises it had sold and became 100 percent company-owned. In 2007, Chipotle Mexican Grill went public.

Between November of 2017 to March 2018, Chipotle Mexican Grill faced a change in leadership, from founder and chief executive officer Steve Ells to Taco Bell CEO Brian Niccol. However, Steve Ells would continue his position as chairman of Chipotle Mexican Grill. It was during this time that the stock price of the restaurant went up to more than 12 percent after the change in leadership.
