Mini Birthday Cakes

Kids love cupcakes, and for good reason! Portable cake is always a good idea. You can make cupcakes look like a birthday cake by generously frosting each one, then setting them close together on a tiered cake stand.

I like topping cupcakes with small candies; M&Ms or peanut candies are my favorites.

Baking cupcakes is just like making cakes but a lot easier. Be sure to line the muffin tins with paper liners for easiest removal.

Have fun with cupcakes. Once you learn how to make a basic recipe, you can add everything from chocolate chips to nuts to candies to the batter. Change the frosting flavor, or you can even stuff them! Put the frosting into a cake decorating bag and top with a medium star tip. Gently insert the tip into the cupcake and squeeze until you see the cupcake bulge slightly at the top. Then remove the tip and frost the cupcake as usual.



  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1-1/2 tsp. vanilla
  • 1-3/4 cups flour
  • 1/4 tsp. salt
  • 2 tsp. baking powder

Preheat oven to 375 degrees F. Line 24 muffin cups with paper liners and set aside. In large bowl, beat butter until fluffy, gradually adding sugars; beat until light and fluffy. Add eggs; beating well after each addition. Stir in vanilla.

Sift together flour, salt, and baking powder and add to batter and beat well. Fill muffin cups 2/3 full of batter. Bake for 18-25 minutes or until muffins are golden brown and tops spring back when lightly touched with finger. Let cool on wire rack.

For frosting, beat together butter and 1 cup powdered sugar along with vanilla until fluffy. Add remaining powdered sugar alternately with the cream and beat until fluffy. Frost cupcakes; top with candies.
