Don’t Get Gobbled Up with Boring Leftover Turkey Recipes; Try Something New

Thanksgiving is over. Kids are playing everywhere, the dishes are done, family members start their naps in front of the television and then the “What I am going to do with all of the leftover turkey?” panic sets in!

Sure you can make the classic same old same olds like Turkey Salad Sandwiches or Turkey-a-la-King. But why settle for the old safety nets when you can have Turkey with Attitude!

Spicy Grilled Cheese and Turkey Sandwich

What you will need:

  • Bread of choice
  • Leftover Turkey pieces
  • Pepper Jack Cheese slices
  • Sliced jalapenos (optional)

Cut a portion of turkey to your liking that will fit on a two pieces of bread. (The white breast meat is obviously the best). Place a piece of Pepper Jack Cheese on each slice of bread, and for the “hotter” crowd, a few jalapenos. Grill on each side until the bread is toasted and the cheese is melted and you’ll have a south of the border turkey sensation!

Teriyaki Turkey Stir Fry

What you will need:

  • 4 cups of sliced leftover Turkey
  • 3 large carrots
  • 1 ½ cups of mushrooms
  • 1 cup snow peas
  • 1can water chestnuts
  • 1can bamboo shoots

Don’t let beef, pork and chicken get the glory of classic stir fry! Take assorted turkey meat pieces and dice up into a portion of two cups. Is your Teriyaki in a bottle? No way! Make it yourself!

  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 Tablespoons vegetable oil
  • 1/4 Teaspoon coarse ground black pepper
  • 1-2 cloves garlic, minced

For the rest of the meal, stir fry the vegetables in a teaspoon of oil until tender, add the turkey and teriyaki and enjoy!

Turkey Quesadillas

What you will need:

  • 8 flour or corn tortillas
  • 1 bag (8oz) Cheddar cheese
  • 1 bag (8oz0 Colby Jack cheese
  • 1 packet taco seasoning
  • 1 pound of cut up leftover turkey pieces
  • 1 tomato
  • 1 can banana peppers

For that Tex-Mex taste unique with turkey, quesadillas are another great option. Warm a griddle to 350°. Place a tortilla on the hot surface and cover with Cheddar and Colby Jack cheese. While the tortilla is browning, heat the turkey in a skillet with your favorite taco style seasoning. When the tortillas are ready, add the turkey with tomatoes and banana peppers. Fold over the tortilla to complete your quesadilla and serve with guacamole and sour cream. Then “gobble” up your snack!

Tater Tot Turkey Casserole

What you will need:

  • 6 cups of diced Turkey leftovers
  • 2 cans Cream of Chicken soup
  • Milk (enough to fill 2 soup cans, ~3-4 cups)
  • 2 cans mixed vegetables
  • 1 bag of Tater Tots

This is an easy and quick way to make dinner that everyone will enjoy. Cube the leftover turkey parts and set aside. In an oven safe casserole dish, add two cans of Cream of Chicken soup. Using the empty can, fill two equal portions of milk and mix with the soup. Add the mixed vegetables and turkey. Place Tater Tots over the mixture and bake for 15-17 minutes at 425° or until the tater tots are golden brown.

Leftover Turkey doesn’t have to be a burden. Experiment, try new things and most of all, have fun!
