History

Here is the story of Oregano’s Pizza Bistro, penned by the founder himself, Mark S. Russell. Oregano’s Pizza Bistro is a Gibbilini family tradition. Mark S. Russell’s father was born on the north side of Chicago during the Great Depression, and his grandmother taught him the secrets of making pizza, pasta, and other established recipes in their family. On the other hand, his dad liked to experiment (to the horror of his mother) and used fresh vegetables to create unique flavors long before this cooking style became popular.

In the 1950s, Mark S. Russell’s parents would entertain. During the weekends, they would utilize every chair in the apartment, throw a large red and white checkered tablecloth over their dining room table and invite friends, family, and acquaintances over for dinner. With an enthusiastic crowd, his dad would serve his variations of time-honored family dishes, as well as the recipes he was developing, many of which received outstanding reviews.

The pasta dishes of his dad were fabulous, but his pizzas, a crowning achievement. Over the years, they would always had family and friends coming by to eat, drink, talk, and listen to the music of Frank Sinatra and swing to Big Band records.

His dad truly practiced his simple philosophy about life, that the keys to happiness are friends, good food, music, and family, of course.

In his parents’ golden years, his dad would still cut a rug with his mom, and reminisce about the good old days of joyfully serving friends and family. Mark S. Russell’s parents have passed away, but their passion lives on in their hearts. These passions are well-loved and thought of highly, as they lived their lives that people can envy.

Years later, Mark S. Russell cleaned out their garage and found close to a thousand assorted plates, wine glasses, and silverware that made him think he had been collecting them for years leading to the opening of his own restaurant.

This founder is proud of the many individuals who have become part of the Oregano’s family and who share his belief of good food and service. In fact, the photo of his parents adorns the front of every Oregano’s restaurant. Truly lovely.

Interesting Facts

Not only did Mark S. Russell’s parents lived their lives well and great, but his parents also taught him the value of giving back. Oregano’s Pizza Bistro is known to support several causes, as well as various charitable organizations.

For one, Oregano’s Pizza Bistro is helping fight hunger with their Cards for a Cause Charity Event. Pasta is a great way to provide a filling meal for several families in need, and they want to do their part to help feed people in the community.

Oregano’s Pizza Bistro, apart from honoring the Gibbilini legacy, also has a Raise Dough project with Gibbilini givebacks. Like many other restaurants with this initiative, those interested may apply and once approved, portions of the sales will be for your organization on your Giveback Day.

The restaurant is also partnered with St. Mary’s Food Bank Alliance, Community Food Bank of Southern Arizona, Phoenix Children’s Hospital, and so much more.

Oregano’s Pizza Bistro also has gift cards, and is open for catering requests.
