- 1 tbsp olive oil
- 1 tbsp white wine vinegar
- 4 tbsp honey
- Flour for dusting
- 100 g salted pretzels
- 100 ml whole-grain mustard
- Two eggs (beaten)
- 12 boneless chicken thighs
- Green vegetables and potatoes (optional)
Heat oven to 180 – 200 °C. Crush the salted pretzels in a plastic bag using a rolling pin. Transfer the crushed pretzels to a plate. Season the chicken by dipping it in flour, then in the beaten egg, and roll it in the crushed pretzels. Do this for all the pieces of chicken, then place them on a baking tray. Drizzle the chicken with oil and bake for 35 minutes.
Mix the vinegar, honey, and mustard in a small bowl. This creates the sauce to serve with the chicken. Green vegetables and potatoes make this a perfect meal.

- Sliced jalapeno and avocado (garnish)
- One red pepper, diced
- Six eggs
- One yellow pepper, diced
- 1 tbsp ground cumin
- One poblano pepper, diced
- 1 cup sweet onion, diced
- 1 tbsp smoked paprika
- Salt and pepper
- Two garlic cloves minced
- 2 tbsp grapeseed oil
- 14 oz of fire-roasted tomatoes, diced
- ¼ cup of green onion, diced
- 1/3 cup crumbled queso fresco
- ¼ cup fresh cilantro, diced
Heat the oven to 375 °C. Heat a cast-iron skillet to medium-high and add the grapeseed oil. Add the onion to the pan and cook for about three minutes. Then, add the red, poblano, and yellow peppers. Add the garlic and cook for at least five minutes until the vegetables become tender. Add cumin, salt, pepper, the fire-roasted tomatoes, and the smoked paprika. Simmer for another five minutes. Crack the eggs over the tomatoes in several spots and season with salt and pepper. Add the skillet to the oven immediately and bake for at least 10 minutes until the eggs are just set. The last step is to sprinkle the dish with green onion, cilantro, and queso fresco. The dish is ready and to serve. Garnish with jalapeno or avocado (optional).
Tuna Pasta Bake
Tuna Pasta Bake is a great, quick dish that needs just a few ingredients—perfect for a lazy cook. This recipe is pocket-friendly, and the speedy preparation makes it faster than the average takeout.
- 2 cups reduced-fat milk
- 300 g macaroni pasta
- 2 tbsp plain flour
- 425 g can of tuna (drained and flaked)
- 40 g unsalted butter
- ¾ cup reduced-fat grated pizza cheese
Preheat oven to 220 °C. Cook the macaroni pasta following the package instructions, which should include boiling salted water. Drain and reserve ¼ cup liquid to be used in cooking and place the pasta in the pan. Melt the unsalted butter in a saucepan and add flour. Stir for a minute and stop cooking. Mix with milk while stirring until combined, then return to the heat and stir for another 3 minutes. Remove from the heat and stir in ¼ cup of cheese while seasoning with pepper. Add tuna to the pasta as well as the reserved ¼ cup of cooking liquid. Toss to ensure they are combined and mix with a spoon. Bake for at least 12 minutes until the cheese is melted and golden color.
Soulful Chicken Soup
Chicken soup is usually associated with times when we feel sick. However, this dish is delicious and easy to make and comforting on a cold night. Its short preparation time is perfect for lazy cooks. All the different flavors meld together for a soul-satisfying experience.
- One fresh rosemary sprig
- Two fresh thyme sprigs
- Two garlic cloves (peeled and bashed)
- Two fresh sage sprigs
- One bay leaf
- 1 ½ tbsp salt
- 2 oz bone-in chicken thighs (trimmed and skinned)
- One medium leek, only the light green and white parts (chopped, after cleaning thoroughly)
- Three medium carrots, diced to ½ inch pieces
- 8 cups chicken broth
- 1 tbsp fresh lemon juice
- One teaspoon grounded black pepper
- 3 tbsp chopped parsley
- One celery root, diced into ½ inch pieces
Place the chicken in a 6-quart slow cooker. Add the celery root, carrots, leek, garlic, all herb sprigs, and the bay leaf. Add ground pepper and table salt to taste. Cook on low for at least 6 hours. The cook time might be long, but a lazy cook only needs 20 minutes of hands-on time. Remove the chicken from the cooker, dice the meat, and discard the bones. Return the diced meat to the cooker after stirring in the parsley and noodles and cook on high for 15 minutes.
