History & Interesting Facts

Schlotzsky’s has a very interesting story. Founders Don and Dolores Dissman started the company in a “small, hole-in-the-wall shop” located in Austin, Texas. The first menu consisted of sandwiches, known as “The Original” which featured mixed meats, cheeses, and black olives on a freshly made, toasted bun. This was based on the Muffuletta sandwich. It looks and tastes unique compared to the sandwiches offered in other restaurants.

In 1981, Schlotzsky’s had 100 franchise stores, and it was also purchased during this time by real estate investors, John and Jeff Wooley and Gary Bradley for less than $3 million. In 1982, Gary Bradley separated with the Wooleys in the business, leaving the latter managing the chain.

While this is a major change in the company, the Wooleys were able to expand the menu of Schlotzsky’s to include specialty pizzas, toasted wraps, salads, soups, and many other items. The Wooleys took the company public in 1995 on NASDAQ.

The chain garnered over $400 million in sales in 2001, but with challenges such as their $11.7 million loss in 2003. In 2004, the Wooleys eventually resigned from the board. Sam Coats was named as the new chief executive officer. During this year, Schlotzsky’s also filed for voluntary Chapter 11 protection in the U.S. Bankruptcy Court in Texas. Then, following this event, the company ceased public trading when Bobby Cox Companies acquired the assets of Schlotzsky’s out of bankruptcy.

Under this new management, Schlotzsky’s strengthened its franchise operations and brand restructuring. The menu got streamlined as well. These included the plans to open several new corporate-owned stores.

Focus Brands acquired Schlotzsky’s in 2006. This is the parent company of Moe’s Southwest Grill, Cinnabon, Carvel, and Auntie Anne’s. Kelly Roddy was then named president, heralding the company to further growth and system-wide reimaging. It included updated restaurants, improved menus, and so much more. They also remodelled stores so they feature bright, bold colors, circle-themed furniture and décor, and playful slogans.

In 2016, a landmark decision in the company paved the way for Schlotzsky’s Austin Eatery, a new restaurant chain that targets millennials with a menu that features Austin-inspired food from the city. The first location of this chain opened in Georgia.

Today, Schlotzsky’s continues to create milestones, writing its history.
