1 onion, diced

1 red bell pepper, chopped

For The Soup

4 slices bacon, diced

2 1/2 cups chicken stock, or more, to taste

  • Prepare a baking sheet with nonstick spray or lightly oil it—Preheat the oven to 400 degrees F.

  • Butternut squash should be tender after 25-30 minutes of baking, stirring halfway through.
