  7. 1 – 2 teaspoons chili/pepper flakes (depending on your preference)

Procedure

  1. Cook the pasta in a large pot according to the package instructions, but 1 – 2 minutes less.
  2. Reserve 1 cup of pasta water, then drain the rest.
  3. Cut the sausages in about 1.5 cm pieces.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the sausages and cook until they turn brown on the outside.
  5. Add garlic and onion and cook for two minutes.
  6. Add a pinch of salt, pepper, chili flakes, and tomato paste in no specific order. Mix and turn the mixture for 8 minutes over medium heat.
  7. Add the pasta and half of the reserved pasta cooking water and toss for not more than 1 minute.
