Green Bean Salad with Red Onion, Tomato and Dill Yogurt Dressing

Serve this super easy salad with a scoop of tuna or chicken salad. Make a pasta salad with the same ingredients by mixing in a cup of whole wheat low-carb macaroni or penne.

  • 3 cup green beans trimmed
  • 1 tablespoon sherry vinegar
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 2 clove garlic minced
  • 1/4 cup orange juice
  • 1 tablespoon fresh dill chopped
  • 1/2 small red onion sliced
  • 2 No Size Beefsteak tomatoes cut into wedges
  • 1/4 cup feta cheese


Bring a pot of water to a boil and blanch the beans for 3-4 minutes. Drain and rinse in cold water.

Combine ingredients for dressing from sherry vinegar through dill in a bowl and mix well.

Arrange the green beans, red onions, and tomatoes on a plate, drizzle with dressing and sprinkle with feta cheese.
