Moist Chocolate Cake with Cream Cheese Topping Recipe

You’ll Need

  • Your favorite chocolate cake mix
  • Ingredients for cream cheese filling: 8 oz. cream cheese, 1/3 cup sugar, 1 egg, dash salt
  • 12 cup Bundt cake pan
  • Frosting or glaze

Step 1 – Preheat oven to 350 or as required for your cake recipe. Using shortening, grease bundt pan and dust with a light coating of flour (or use a non-stick spray containing flour like Pam). Prepare cake mix as directed. Set aside.

Step 2 – Prepare cream cheese filling. Beat 8 oz cream cheese for a minute or so until smooth. Add 1/3 cup sugar and dash salt and beat together. Scrape sides of bowl. Add egg and mix well, scraping sides of bowl frequently.

Step 3 – Pour all but about 1 cup of cake batter into prepared bundt pan.

Step 4 – Spoon cream cheese filling over the cake batter. Carefully spoon cream cheese filling over the cake batter. Be sure not to allow the filling to touch the sides of the pan. The filling should be a ring in the center of the cake batter.

Use the reserved 1 cup of cake batter to cover the cream cheese.

Step 5 – Bake as directed. A bundt cake may take up to an hour, depending on the density of the batter. Check after 30 minutes by inserting a wooden pick in the center of the batter. If you are concerned about the cake over browning, place a piece of aluminum foil over the pan while the cake finishes baking. When baking is complete, allow the cake to cool in the pan for about 20 minutes. (If you try to remove the cake too soon after baking, the top may separate.)

Step 6 – Remove the cake from pan. Invert your cake plate over the baked cake and flip it over. The cake should easily slip out of the pan. Allow to cool completely before frosting.

Step 7 – Drizzle glaze over cooled cake.Frost or glaze the cake. The simplest way to frost this cake is to take a can of ready made cream cheese frosting (white or chocolate) and microwave for about 30 seconds until pourable. Then gently drizzle around the top of the cake, allowing the frosting to drip partway down the sides and into the center hole. Use your cake decorating kit to make it look great!

Or make a glaze of powdered sugar mixed with a few drops of milk.

You can also frost the cake completely with your favorite frosting

Tips & Warnings

If you don’t care for chocolate, you can use this filling with other flavors such as pumpkin or spice cake. Try dropping a teaspoon or so of the cream cheese filling onto cupcakes before baking. Drop mounds of the cream cheese filling onto a pan of brownie batter before baking and swirl the mounds together by drawing a knife through in a figure eight. Use hot pads to protect your hands when flipping the cake onto the plate. Don’t make this cake if you are on a diet – this cake is too hard to resist!
