I love a variety of cookies at Christmas. But who has the time to make multiple varieties at once. Not to mention, who can eat that many cookies. The answer is icebox cookies. I start making the cookie dough in early November. I make one cookie dough a day. Then I put them up, until I am ready to serve them. This provides a variety of cookies and it gives kids the luxury of having their favorite cookie at a moments notice.
Another joy of these little cookies is, no special recipe is needed. Most cookie dough can be used as icebox cookies. I use the Toll house cookie recipe off the bag. Other classic cookies I have used as icebox cookies include, sugar cookies, spice cookies, oatmeal raisin cookies, and chocolate cookies. All have turned out beautifully. If I make the logs well, the slices will be perfect circles! Delicate, molded, and wet cookies may not work as icebox cookies.

When preparing the cookies, follow the directions on the recipe. Then divide the dough into 2 sections. Lay out a piece of wax paper, the size of a small cookie sheet. Place the dough on the paper. Shape the dough into a log. Roll the dough up in the wax paper. Then wrap in plastic wrap. I also place the wrapped dough in freezer bags. On the bag write the type of dough it is and brief cooking directions. Don’t forget to include the date the dough was made. Then pop them into the chest freezer. Repeat with the second half of the dough. Most cookie dough will last at least 1 month in the freezer.

When you are ready to bake. Preheat your oven. Take the dough out of the freezer. Place the dough on a cutting board. Carefully, and with a sharp knife, cut 1/4 inch slices of cookie dough. Place the slices on a cookie sheet lined with parchment paper. When the oven is heated, bake the cookies. Baking time may need to be adjusted slightly. Just check to keep from burning.
