Everybody knows that eating at home is loads cheaper than eating out. Instead of paying a premium to have someone serve you, cooking your own meals can be a rewarding way to challenge yourself in the kitchen with new recipes and different kinds of meals. Of course, it’s not always easy to be a home chef, what with forgetting to buy groceries and being on the run all the time. Still, it’s important to get yourself home for at least a few meals a week, and then the question is: What to cook?
Well, here’s a suggestion: Simple Spaghetti Squash!

If you’re looking for a change of pace from carbolicious pastas that leave you feeling bloated and sleepy, spaghetti squash is a delicious, nutritious substitute. But forget what the fancy cookbooks tell you: making spaghetti squash doesn’t have to be time consuming or difficult. All you need is a small-sized squash and a microwave to get the party started.
- Grab your squash, and cut it in half lengthwise. This is probably the hardest part, simply because the squash can be difficult to split with an inferior knife.
- Once you’ve got it opened up, grab a spoon and start scraping out the seeds and the gross stringy bits attached to them. You want a nice clean surface, but you don’t have to dig too deep. Just get the seeds out and toss ’em (unless you plan on roasting them later).
- Place your two squash halves cut side up on a plate. Stick them in the microwave and zap them on high for approximately 10 minutes.
- After 10 minutes elapse, check to see how firm they are by inserting the tines of a fork. If it’s still pretty firm, go ahead and give it another 10 minutes. Usually a small squash takes about 20 minutes in the microwave.
- Once your squash is soft enough, remove the plate from the microwave with a glove (these puppies get HOT!) and let them stand for about five minutes before fork-scraping the insides out onto your serving plate. If you’re feeling fancy, you can even put the squash back into its outer shell and serve it in this “bowl.” This is a good move if you’re serving spaghetti squash for a dinner party.
- Pour some homemade or store-bought pasta sauce on top, sprinkle on a bit of parmesan and/or mozzarella cheese and voila! Dinner is served!
