For a different twist for Thanksgiving lunches that still include the most important part of Thanksgiving: Turkey; Try these recipes!
Creamed Turkey
- 7 c. cooked chopped turkey
- 1 can cream of celery soup
- 1 can cream of chicken soup
- Onion, to taste
- ¾ c. mayonnaise
- ½ to ¾ lb Velveeta cheese
Mix all ingredients, except turkey and heat enough to melt cheese. Add turkey and heat through. Serve on buns. **Also works great in Crockpot.
Turkey Salad on Wheat
- 2 c. chopped romaine lettuce
- 1 ¼ c. diced cooked turkey
- 1 /2 c. shredded Swiss Cheese
- 2 green onions, thinly sliced
- 6 bacon strips, cooked and crumbled
- 1/3 c. frozen peas, thawed
- ½ c. mayonnaise
- ¼ tsp pepper
- 12 slices whole wheat bread
In a bowl, combine first 6 ingredients; mix well. Add mayonnaise and pepper; toss to coat. Spread on 6 slices of bread. Top with remaining bread. Serve immediately. **Also works great with chicken and pita bread
Turkey Soup
- 5 qts water
- 1 meaty turkey carcass
- 1 onion, diced
- 3 tsp salt
- 2/3 c. uncooked rice or barley
- 1 pkg (12 oz) mixed frozen vegetables
- 1 can (16 oz) tomatoes, cut up
- 3 celery stalks, cut up
- 1 tsp thyme, crushed
- ½ tsp oregano
- ½ tsp poultry seasoning
- ¼ tsp black pepper
- 1 c. macaroni noodles
Simmer first 4 ingredients 2 hours; remove carcass and cool. Remove meat from bones, cut in pieces and add to broth. Then add remaining ingredients. Boil 1 hour or more and season to taste.
