Irish Soda Bread Recipe

  • 4 cups whole wheat flour
  • 1 cup all-purpose white flour
  • 1-1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup oatmeal
  • 2 cups non-fat buttermilk

Preheat oven to 400 degrees F. Sift flours, baking soda and salt together. Pour into a large bowl. Stir in oatmeal. Make a well in the center. Add buttermilk. Stir together until a soft dough forms.

Turn out onto a lightly-floured surface and knead lightly. Do not overknead. Shape into an 8″ round and score an “X” across the top with the best bread knife. Transfer to a cookie-sheet sprayed with nonstick cooking spray. Bake 45 minutes or until the bread makes a hollow sound when tapped on the bottom.

Serves 12.
