I love summer fruits recipe. Their sweet and tart balance, the ripe juiciness of their flesh, and their tender texture is almost erotic. There’s one way to make these delicious bites even better: grill them!
Grilling fruits is simple and takes almost no time at all. The high heat caramelizes the sugars in the fruits, making gorgeous grill marks and creating thousands of complex flavors. Contrast is everything with this fruit dessert recipe. The fruits are hot and almost crisp on the outside, still cool and juicy on the inside. Serve them with a sorbet, ice cream, or sweetened whipped cream for another contrast.
Choose fruits that are sweet and tart: peaches, mangoes, nectarines, apples, plums, pineapples, and pears are all good choices.

There’s only one key to grilling fruits: watch them constantly! They can go from perfectly grilled to charred in a matter of seconds. Most ripe fruits will take only 1 to 2 minutes on each side. Grilling at the end of a meal ensures that the temperature of the coals will be perfect. Enjoy.
Grilled Summer Fruits
- 2 peaches
- 2 nectarines
- 4 rings fresh pineapple
- 2 Tbsp. lemon juice
- 1/4 cup sugar
- 1 Tbsp. melted butter
- 2 cups any flavor sorbet or frozen yogurt
Cut peaches and nectarines in half and remove pit. Place on serving platter along with the pineapple rings. In small bowl combine lemon juice, sugar, and melted butter and blend well. Spread this mixture on one side of each piece of fruit.
When coals are medium low, place fruits, coated side down, on the grill. Do not move for one minute. Then, using tongs, carefully lift one piece of fruit. If it has brown grill marks and is sizzling, turn the fruits over. If the grill marks aren’t apparent, let the fruit cook for 1-2 minutes longer, then turn. Cook for 1-2 minutes on the second side. Place fruits back on serving tray and top each with a spoonful of sorbet or frozen yogurt. Serves 4-6
