You do not have to be a fan of Guinness to toss one back this St. Patrick’s Day. You can be a fan of cake. There are many ways to enjoy the nice dark drink in honor of the “Kiss me I’m Irish” holiday coming up this March.
The Ireland: Guinness Cake (1) is a great treat for those starting St. Patrick’s Day with a cup of Irish Breakfast tea or finishing it with a cold Bailey’s on the rocks. Here are the directions for this easy and tasty Irish recipe. Quick note, though this cake is easy it will take about three hours to make. You may want to plan on pulling out a great Irish movie to watch while your cake is baking.
Line the sides of a 9inch round or 9inch square pan with waxed paper and heat your oven to 325 degrees.

Sift together three and a half cups of all purpose flour, two teaspoons of cinnamon, one teaspoon of mace and one teaspoon of ground ginger. Add in one cup of butter with a food processor or, as my lovely wife likes to do, a pastry cutter until you get a mixture that resembles coarse breadcrumbs. Add one cup of seedless raisins, one cup of golden raisins (my wife prefers cranberries), one cup of finely grated lemon or orange peel and one and three quarters of a cup of brown or dark brown sugar.

Beat four eggs until light and fluffy and add to the fruit, flour and sugar mixture. Dissolve one and a half teaspoons of baking soda into two thirds of a cup of Guinness and add to the mixture. Feel free to drink up any remaining Guinness that you may have; no need to waste it.
Pour the cake mixture into the pan and then place in the oven at 350 degrees for an hour. After the initial hour then lower the temperature to 300 degrees and bake, covered with wax paper for an additional hour and a half.
When the Ireland Guinness Cake is cooled peel the wax paper off and dust with powdered sugar. This cake is delightful when served up with some homemade unsweetened whipped cream. (Beat heavy cream in a best countertop blender until soft peaks form). According to the recipe on European Cuisines some people like to gently slice the cake and drizzle more Guinness on top.
