Lemon Truffle Parfaits: Quick and Easy Spring Dessert Recipe

Here’s my definition of an easy dessert for your kids: If a child can make it, it’s easy! Parfaits are among the simplest desserts to make, yet when carefully made and presented with style, they are fancy enough to serve to company.

This quick and simple recipe requires no special skills, ingredients, or equipment. This parfait also illustrates a basic rule of chilled desserts: You can vary the flavor and many of the ingredients to create your own masterpiece. Substitute chocolate pudding for the lemon curd, semisweet chocolate chips for the white chips, and chocolate wafer cookies for the sugar cookies, and you have Chocolate Raspberry Parfaits. Let your imagination run wild!

Lemon Truffle Parfaits

Make this dessert ahead of time and store it, well covered, in the fridge. When you’re ready to serve, top with the mint leaves and a dollop of whipped cream and serve with long iced tea maker spoons.

  • ½ cup whipping cream
  • ½ cup white chocolate chips
  • 1 cup purchased lemon curd
  • 6 sugar cookies
  • 1 cup fresh raspberries
  • 4 mint sprigs
  • Additional whipped cream

In small heavy saucepan, combine ½ cup whipping cream with the white chocolate chips. Melt over low heat, stirring frequently, until mixture is smooth. Place mixture in refrigerator for 30-40 minutes, stirring occasionally, until cold. Then use a hand mixer to beat the white chocolate mixture until soft peaks form. Fold into lemon curd until mixture is smooth and blended.

Break cookies into 1″ pieces. In four parfait glasses, layer cookies with the raspberries and lemon curd mixture. Cover and refrigerate until serving time. Garnish with mint and additional whipped cream at serving time. Serves 4
