Quick to Prepare Dessert Recipes


On occasion a quick-to-prepare dessert becomes necessary–a neighborhood meeting, impromptu family gathering or last minute guests may demand it. But creating a delicious sweet doesn’t have to mean hours in the kitchen with a hot oven, rolling pin and piles of dirty mixing bowls. These indulgent goodies can be whipped up in just a few minutes, but the results will taste like hours.

Orange-Cinnamon Pound Cake

If orange extract or cinnamon are unavailable, don’t despair, and don’t take extra time to run to the store. Simply forgo the cinnamon, replace the orange extract with vanilla or lemon extract and start baking.


  • 1 3/4 cups all-purpose flour
  • 1 cup white granulated sugar
  • 1/2 tsp. salt
  • 1 3/4 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup whole milk
  • 2 eggs
  • 2 tsp. pure orange extract


  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease a cake pan with a generous coating of butter. Dust with flour. Set aside.
  3. Sift flour and sugar into a large mixing bowl.
  4. Stir in salt, baking powder and cinnamon. Mix well to evenly distribute the ingredients.
  5. Add softened butter, milk, eggs and orange extract.
  6. Using an electric mixer, beat on high until smooth and well-blended.
  7. Spoon batter into prepared cake pan.
  8. Bake for 25 to 30 minutes or until a toothpick inserted into the center of the cake comes out clean.

Buttery Lemon Delight Cookies

A lack of lemon extract won’t take away from the delicate sweetness of these tiny cookies. Add an extra 1/2 tsp. vanilla extract and they’ll disappear just as quickly.


  • 1/2 cup unsalted butter, softened
  • 1/2 cup white granulated sugar
  • 1 egg
  • 3/4 cup all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. pure lemon extract
  • 1/2 tsp. pure vanilla extract
  • Confectioner’s sugar


  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease cookie sheets with a generous coating of butter.
  3. Combine butter, sugar and egg in a large mixing bowl. Using an electric mixer, cream on high until fluffy.
  4. Add flour, salt, lemon extract and vanilla extract. Beat until well-blended, smooth and free of lumps.
  5. Drop teaspoon-sized cookies on prepared cookie sheets.
  6. Bake for 8 to 10 minutes.
  7. Allow cookies to cool and dust with confectioner’s sugar.

Creamy Raspberry Candy

The beauty and ease of this candy recipe is that any extract or candy flavoring may be substituted for the raspberry extract for a completely different candy experience. Suggestions: Vanilla, strawberry, orange, maple or coconut.


  • 1 box confectioner’s sugar
  • 1 stick unsalted butter, softened
  • 1 tbsp. cream or half ‘n half
  • 2 tsp. raspberry extract
  • Red food coloring (optional)


  1. In a large mixing bowl, combine 1 cup confectioner’s sugar, butter and cream (or half ‘n half). Using an electric mixer, cream ingredients until smooth and well-combined.
  2. Continue to beat the mixture on high as the remainder of the confectioner’s sugar is gradually added.
  3. Stir in 2 tsp. raspberry extract. Mix vigorously to evenly distribute the flavor. If a more intense flavor is desired, add more extract to taste.
  4. Stir in red food coloring (optional) until desired tint is achieved.
  5. Roll candy into 1-inch balls and line up on a cookie sheet. Press each candy with a fork to form a design on top. Time permitting, candy may also be rolled out and cut into shapes with cookie cutters.
