Sweet Potato Recipe with Baked ApplesIf you are tired of the old candied yam recipe and want to try something new with sweet potatoes, this recipe is for you. It is a real crowd pleaser and is perfect for dinner.
This sweet potato and baked apples recipe is a favorite of my family. I have been preparing this recipe to go along with dinner for over 30 years. Dinner just wouldn’t be the same without it. This is a delicious, yet simple sweet potato recipe.

Sweet potatoes are packed with vitamins A and C which makes cooking with them even better. Even finicky eaters love the sweet, moist flavor of a sweet potato. Not only are you serving them a vegetable that tastes great, but it is healthy for your family, as well. Give this sweet potato recipe a try for dinner and see your family gobble it up.

Sweet Potato and Apples Recipe:

  • 1 ½ lbs. sweet potatoes (about 3 large)
  • 1 lb. apples
  • 5 TBS. brown sugar
  • ¼ tsp. cinnamon
  • ½ tsp. ginger
  • 4 TBS. sliced butter
  • 1/3 c. white or red wine vinegar

The original recipe says to bake the sweet potatoes in their skins at 400 degrees for 40 minutes. I adapted this through the years to save time. Now I cook the sweet potatoes in the microwave for about 8 minutes and the sweet potatoes are just as good. Make sure to pierce the potato skins with a fork before cooking in the microwave or they will burst. When the sweet potatoes are tender, peel and cut into thin slices.

Core and peel the apples with the best apple peeler and cut them into slices, as well. ¼ inch slices work well because they keep their shape after baking. If they are slice too thin, the apples will turn to mush.

Mix 3 TBS. brown sugar with the cinnamon and the ginger. Butter the bottom of a casserole dish with 1 TBS. butter and place a layer of sliced apples in the bottom of the casserole dish. Cover the apples with a layer of the sliced sweet potatoes. Sprinkle these two layers with the brown sugar and spice mixture. Dot with butter. Continue layering the apples, sweet potatoes, and sugar mixture until they are all used up. Pour the wine vinegar over the top and sprinkle with the remaining 2 TBS. brown sugar. Cover the casserole and bake at 350 degrees for about 40 minutes.

This recipe serves about 12 people.
