  • 1 lbs. ground beef

  • ½ cup carrots, diced
  • ¼ cup celery, diced
  • ½ cup frozen green peas

  • ¼ cup tomato paste
  • ½ cup red wine

  • ½ teaspoon pepper
  • ½ cup bread crumbs
  • 1 piece beef bouillon cube
  • 2 pieces bay leaves, crumbled
  • some fresh thyme
  • some fresh marjoram
  • ½ lbs. potatoes, peeled (raw)
  • ½ teaspoon salt
  • 1 tablespoon cooking oil
  • ½ stick unsalted butter
  • 1 cup cheddar cheese


  1. Heat some salted water in a small pan. When the water boils, put in the carrots to cook until done but still firm. Be careful not to overcook the carrots. Drain them and set aside.
  2. Heat a skillet. Sautee onions and garlic in oil. When the onions and garlic are slightly wilted, add the ground beef and tomato paste. Pour in wine. Add the beef bouillon cube, salt, pepper, bay leaf, thyme, and marjoram. Simmer to cook the meat and let the flavors of the wine and spices blend. When the liquid has slightly evaporated, add the carrots, celery, and green peas. Stir 3-4 times to cook through. Turn off heat. Add in bread crumbs. Set aside.
  3. Using an electric spiralizer, attach the peeled raw potatoes and work until you get long potato “noodles.”
  4. Fill a medium sized pan with water. Add some salt. When the water boils, carefully slide in the potato noodles in batches to boil till slightly cooked. Carefully scoop out the semi-cooked potato noodles and transfer onto a tray. Set aside.
  5. Assemble the casserole. Take a deep-dish baking pan and rub the base with butter. Layer the cooked ground meat and top with the semi-cooked potato noodles. Season with salt. Top with grated cheddar cheese.
  6. Bake in a 350°F oven for about 15-20 minutes until the cheese starts to melt and the potatoes start to crisp.
