As the weather begins to get cooler and we spend more time indoors, it’s nice to have something baking in the oven to give the house a warm autumn feeling. These apple muffins fill the house with a wonderful aroma of Macintosh apples and cinnamon! I formulated this amazing fall recipe last fall at college because I missed home-cooked food…and my roommates LOVED them!
Preparation time: about 20 min. Baking time: 20-30 min. Makes 12+ muffins.
- 1 ½ cup flour
- ¾ cup sugar
- 1 ½ teaspoon baking powder
- 1-1 ½ teaspoons cinnamon (more or less depending on how much you like using cinnamon!)
- ½ cup milk
- 1/3 cup melted butter or canola oil
- 2 large eggs, lightly beaten
- 2 finely chopped apples (I used Macintosh apples which were kind of small)

- Sprinkle chopped apples with sugar from sugar shaker, microwave for about 3 minutes. Set aside.
- Stir together milk, butter/oil, and eggs.
- In a separate bowl, use an electric hand mixer to mix together baking powder, sugar, and cinnamon. Add the wet ingredients and combine using a wire whisk or fork.
- Mix in flour just until there are no dry chunks.
- Lightly stir in the apple.
- Fill muffin pan about ¾ with the mixture. You could also use foil muffin liners on a baking pan if you don’t have a muffin pan!
- If you want, you can sprinkle some cinnamon or cinnamon sugar on the tops of the muffins; it adds a nice touch.
- Bake at 400° for about 20-30 minutes.
- Take out, let cool for about 5 minutes, and enjoy!
The muffins should come out moist, but not watery! Oven temperatures may vary, so be sure to check on them by inserting a toothpick in the center until it comes out clean. Enjoy!
