Korintje cinnamon is perhaps the most popular variety of cassia cinnamon. Cassia cinnamon meanwhile is a type of cinnamon that is used so widely, that it is often actually considered to be interchangeable with cinnamon itself! Likewise, korintje cinnamon goes by other names, such as padang cassia.
In this post, we will be looking specifically at korintje cinnamon – where it comes from, how it is used, and why it deserves a spot on all spice racks.
Korintje Cinnamon Background
Most korintje can be found in Western Sumatra. This is where it was originally cultivated, specifically around the city of Padang and the Krinci Regency. Korintje is a Dutch word, seeing as the spice was originally cultivated by the Dutch during the colonial reign over Indonesia. This variety in particular is different from Ceylon cinnamon and cassia then, seeing as it is harvested from slightly higher altitudes and at a different time of year as compared with other varieties. This subtly effects the flavor and thus changes the way you might use it with your baking tools.
Uses for Korintje Cinnamon
While korintje cinnamon is a little different from other forms then, it is generally still used in a similar manner when baking. You’ll use this with a bread maker to make the occasional sweet bread, or with your cutting board and some flour to make cakes.
Korintje cinnamon is among the richest in the essential oil that provides the most flavor. That in turn means that it will taste a little stronger than other cinnamons that you might be used to using.
At the same time though, korintje also comes with its own varieties in terms of strength: and can be rated as one of three grades: A, B, and C.
A grade cinnamon is highly pungent, whereas C grade is a little bitter. The stronger grades then also tend to be smoother and sweeter. Note as well that you can always put more or less into your mixture, depending on the recipe.

The ingredients are:
- 2 medium eggs
- 125ml vegetable oil
- 250ml milk
- 250g golden caster sugar
- 2tsp korintje cinnamon
- 400g self-raising flour
- Pinch of salt
Beat the eggs, then add the oil and milk. Beat to combine or use a whisk. Now you’re going to use a flour sifter to add the 400g of cinnamon. At the same time, add the sugar, salt, and cinnamon. Whisk some more and then pop in the oven on a warming tray until risen and colourful (around 20-25 minutes). You can also use a little food coloring to give an attractive color. Or why not use an apple slicer and add in some fruit?
