We select our chickens from a small free range farm on the East End of Long Island - they are superior in flavor and texture. We air roast these birds and serve them three ways: Rosemary & Chive, Red Miso & Ginger, and Smoked Paprika and Peppercorns. Accompanied by homemade rosemary biscuits, shredded red cabbage and daikon salad with apples & pomegranates, and fingerling potato salad.
We work with a 3rd generation master of smoked meats and have our fresh Durok pigs custom cured. Our hams are aged for a minimum of three months and are very lean and full of flavor. Prepared with a citrus glaze and served with fresh rolls, mashed sweet potatoes and a spinach & arugula salad.

These fish are caught in cold deep water of the North Atlantic and are prized for their delicate texture and sweet flavor. We hand select these fish, debone each fillet and poach in Pink Champagne. Served over a bed of Wild Mushroom Risotto.

Superior to the more common farm raised and imported shrimp we use only the very best Wild Caught East Coast Shrimp and stuff with crabmeat and fresh ricotta.

All of our lobsters are caught in the Wild and represent the highest quality available. For this dish we also make our own pasta with a very special flour which we import form Italy. The lobsters are butchered fresh and alive and the sauce is made with organic San Marzano Tomatoes, fresh basil, garlic, and red pepper.
